The Drink I'll be Sipping All Summer

There are few things more simple than this summer drink. Frozen watermelon, lime juice, a few splashes of water, and some fresh mint... and that's it! It's also super refreshing, low calorie (you could drink four of these and still not hit 200 calories), hydrating, and freshens your breath. What more could you ask for?

I made this with frozen watermelon from last summer. I thawed it for about 20 minutes, then threw in the blender with the rest of the ingredients. I enjoyed this drink so much, I had three over the course of a hot summer day the first time I made it!


If you don't have frozen watermelon or don't have time to freeze it, use regular watermelon and add a few ice cubes to your preference.


As my sister cleverly mentioned, this drink would be even better with a splash of Tequila :)

Mint Watermelon Slushie

Makes 1 large serving


Ingredients:

1 1/2 cups frozen watermelon

1/2 cup water

1 Tbsp lime juice

1 sprig mint leaves (optional but delicious)


Directions:

Add all ingredients to a blender. Blend on high until incorporated. Add more water depending on how strong your blender is.
