Salty Jello? Yup. Don't knock it 'til you've tried it! This yummy jello dessert is a low calorie treat. Stack squares on top of each other for a creative presentation, or serve as is. Be prepared to be asked for your recipe!
Salty Sweet Jello
Serves 6
Ingredients:
1 packet jello (Vegan jellos are available - I like "Simply Delish")
1 1/2 cup of cut fruit (pineapple, strawberries, grapes, etc.)
1/2 cup pecans (walnuts can substitute)
1/4 tsp salt
1/4 cup shredded coconut (optional)
Cool whip/whipped cream/coconut cream* for topping
Directions:
Make jello per box directions.
Arrange fruit slices into an 8x8 pan** or pie dish. Pour liquid jello over fruit.
Crush pecans with mortar and pestle (or chop) into small pieces. Add the salt to the pecans and mix.
Sprinkle pecan mixture over jello.
Sprinkle coconut shreds on top of jello.
Let set in fridge per packet directions, a few hours.
Serve with whipped cream!
*If using coconut cream, place a can of full fat coconut milk in the fridge at least one day before using. Once chilled, open can and scrape out coconut cream. Use as is or whisk for a minute or too for a creamier consistency. Leftover coconut milk can last for 3-4 days in the fridge (or toss it into a smoothie!).
**Use a smaller dish (such as glass tupperware) for taller slices of jello, or stack squares on top of each other (pictured above).
