Believe You're Somewhere Tropical with this Baked Pineapple Dessert

Um... yum! This is an easy, breezy dessert that you can eat while pretending that you are lounging in Belize. Mix it up by using other fruits in addition to the pineapple, such as cherries, pears, or plums. I used bananas this time. Pair with a Pina Colada and believe you're relaxing on a beach of white sand!


This is a great dessert to serve in the summer (grill instead of bake!) or for a gathering with friends. Pair with ice cream for a special Sunday bar, simply top with whipped cream, or cook for yourself and eat it with oatmeal for breakfast!

Easy Baked Pineapple

Serves 4


Ingredients:

1 Pineapple

1 Banana

1 Tbsp Cinnamon

2 Tbsp syrup/agave/honey (if desired)


Directions:

Preheat oven to 400 degrees F. Chop pineapple into desired shapes - triangles, cored circles, or whatever is easiest for you

Chop banana into thick slices

Spray baking sheet with olive oil or lay down parchment paper

Spread fruit on baking sheet

Sprinkle with cinnamon and sweetener (if using)

Bake for 8 - 12 minutes


Enjoy!

I find that the fruit sweetens plenty while baking, so I don't need any extra sweeteners 😊
